Miso Soup Recipe (Two ways) // Eggplant + watercress// Daikon + carrot

Most of us are familiar with the tofu miso soup but today I want to share 2 miso soup recipes I cook at home, a hearty eggplant + watercress miso soup and on the sweeter side, daikon + carrot miso soup!

Ingredients:
Eggplant + Watercress
½ cup Water Cress // roughly chopped (substitute: spinach)
1 Cup eggplant // cut into 1inch thick quartermoons
2 Cups Katsuobushi Dashi
1+½ Tablespoon miso

Daikon + Carrot
⅓ Cup Carrot // grated
¾ cup Daikon // cut into ¼ in thick quarter moons
2 cups katsuobushi
1+½ tablespoon miso
