Tacos y Tortas Jimmy, the best cochinita pibil in Quintana Roo 🇲🇽

I remember one of the first times I went exploring Quintana Roo and while in Carrillo Puerto I inquired where to go and have a good cochinita pibil, a delicacy pork dish from the Yucatan peninsula, and everybody sent me to Jimmy!
Jimmy back then had a portable or movable stand in a corner of the city a couple of blocks from the main square.
Since then, every time I travel to Quintana Roo, I have to drive there and have some of the best if not the best, cochinita pibil tacos!
