香兰薯粉餅 Pandan Kuih Bangkit
薯粉餅是传统华人新年必备的饼干之类食物。它是大人和小孩都喜欢吃的饼干,入口即化, 这食谱是加入香兰汁使它吃起来带有香兰的清香味道又帶着浓郁的椰奶, 椰香四溢, 顺滑的口感.
成分材料:
350克木薯粉(炒前重量)
350g tapioca flour (weight before fry)
100克西米粉/或玉米粉(炒前重量)
100g sago flour/ corn flour(weight before fry)
2个蛋黄
2 egg yolks
60克細砂糖
60g castor sugar
170ml浓椰奶
170ml thick coconuts milk
30毫升香兰汁葉沉淀的精华
30ml pandan juice extract (overnight sediment)
一些香兰
some pandan leaves
保留40克炒后的粉用来涂模具
reserve 40g fried flour for dusting mould
