冬菇炆排骨 Braised Pork Ribs With Shiitake Mushrooms (有字幕 With Subtitles)
排骨300克, 乾冬菇50克(已浸軟),薑1小塊, 紅蔥頭1粒,蒜頭3粒。
排骨洗淨煎至微黃下薑、紅蔥頭、蒜頭爆炒,下冬菇翻炒,轉小火下少許蠔油、1小塊冰糖、1湯匙紹興酒、適量鹽、少許老抽、加熱水至排骨面小火炆45分鐘,收汁上碟。
Ingredients:
Pork ribs 800 grams
Dried shiitake mushrooms 50 grams
Ginger slice 1
shallot 1
Garlic cloves 3
Steps:
Rinse and fry the pork ribs to slightly brown, Add in smashed ginger, shallot and garlic to saute, Add in macerated shiitake mushrooms to stir-fry, Turn to low heat for seasoning with in a bit of oyster sauce, 1 piece of rock sugar, 1 tbsp of Shaoxing wine, moderate amount of salt and a bit of dark soy sauce, Pour in hot water to braise for 45 minutes, Thicken the sauce to serve.
