$1,000 Strawberry Shortcake
Not surprisingly, a great strawberry shortcake requires top quality strawberries. And unfortunately, most fruit you can get at your everyday market these days isn't good. Generally speaking, it's artificially large, pumped with chemicals and pesticides, and lacks flavor. Finding a local farmers market or picking berries in the wild is a step up, but Japan takes it to a completely new level when it comes to fruit.
In Japan, and many other countries for that matter, fruit is treated more as a luxury than a meal item. As opposed to an everyday item, fruit is oftentimes seen at holidays, special occasions, or used as a gift. This in turn means that they take their fruit production far more seriously, and I was fortunate enough to discover a company that has brought Japanese strawberries to the United States.
Omakase berries, which come from a company called Oishii (https://www.oishii.com), are produced in an indoor farm in New York City using an indoor environment that mimics the outdoor growing conditions (rain, air, heat, light, bee-pollination) in the Japanese Alps. The resulting strawberries have an indescribable aroma, a soft and creamy texture, and are extraordinarily sweet. Each sleeve is $50, but they are more than worth it. And, I just had to make a beautiful shortcake with them.
Macerated Strawberries
1 lb strawberries
3 tbsp sugar
Brown Butter Shortbread
2.5 cups all purpose flour
1 cup cold browned butter
1/2 cup + 2 tbsp sugar
1/4 tsp salt
Whipped Cream
2 cups heavy cream
1/2 cup powdered sugar
1 tsp vanilla extract
Strawberry Sauce
3 cups strawberries
2 tbsp sugar
1/3 cup water
