Easy Kielbasa Stew

With only about 15 minutes of active cooking time, you can make this hearty stew to feed you lunch for an entire week.

RECIPE: (serves 5-7)

Equipment:
Slowcooker or instant pot
A cutting board
A knife
A large spoon to stir
Containers to store the leftovers

Ingredients:
Half a head of cabbage, core removed, cut into chunks
An onion, peeled and cut into chunks
4 garlic cloves, peeled and minced
3 carrots, chopped into chunks
5 potatoes (I prefer a waxy kind like yellow or red), cut into chunks
2 pounds kielbasa (or any smoked sausage), cut into chunks
1-4 cups broth or water
1 tsp salt
1 tsp black peppercorns (or ground black pepper)
1 bay leaf (optional)

Directions:

1. Dump all the ingredients into a slowcooker. I showed a certain order in the video, but the order doesn’t matter. Just dump everything in there.

2. Tightly secure the lid on your cooker and cook on high for 4 hours in a slowcooker, or 1 hour in an instant pot.

NOTES:

1. If you have a smaller slowcooker, you will need to make a half recipe. (Or just make the recipe twice.)

2. You can add any other herbs and spices you think would be good, but try just one or two at a time.

3. If you don’t want to chop vegetables, everything can be purchased in smaller sizes. Buy frozen pearl onions instead of whole fresh onions and add about a cup or two of frozen pearl onions. Buy baby carrots and use a couple handfuls. Buy either “new” potatoes or fingerling potatoes in a bag and dump 2-3 cups of those in the pot instead of cutting bigger potatoes. You can also buy a bag of pre-shredded cabbage, but if you do use that, try to find a bag with a bigger cut. Pre-shredded cabbage in a bag will dissolve into the sauce. I recommend making the version with only one cup of broth in this case.

4. Add more broth if you want it to be a soup. Add less broth if you want it to be more like a braised meat and vegetable dish.
