Sourdough Olive Bread with Herbs, explanation for common problems

Olive Sourdough Bread recipe

Sourdough starter:
Starter 50g
bread flour 50g
Water 50g

Olive Bread:
500g bread flour
320g water
150g sourdough starter
5g salt
100 g black olives
100g green olives
1/2 tablespoon of mixed herbs

proofing basket: 25x8.5cm

Preheat the oven and dutch oven to 270C/520F
Cover the dutch oven, use 250C/480F, bake for 30 minutes
Remove the lid, cool to 200C/390F, and bake for another 15 minutes
