WHAT'S FOR DINNER? | EASY DINNER IDEAS | SIMPLE MEALS

We were excited to get home from vacation to start filming some more yummy dinners! We really enjoyed this week's meals and we know you will too!! Big thanks to Dee for sending in this week's Subbie Supper!! It was AMAZING!! Definitely a keeper!!!

*SUBBIE SUPPER* COTTAGE PIE (MINCE AND TATTIES):

1lb Minced beef (minced lamb)
1 large onion
2 carrots, sliced or chopped
bouillon beef or lamb stock cubes (to taste)
cornflour or gravy browning to thicken

Brown mince meat with onion and drain off excess fat. Add carrots and bouillon cubes and just enough water to cover the meat.

Bring to the boil then turn down heat and simmer till a lot of the water has evaporated, this saves on using gravy browning or cornflour to thicken. (The gravy browning does add a bit of colour)

While that is cooking, make enough potatoes for the family. Boil, then mash, using butter until creamy.

When all is ready, use a draining spoon and place the minced meat in a casserole dish, (you don't want too much gravy in it now (keep gravy for serving).

Layer the minced meat at the bottom and top off with the mashed potatoes. We use a fork to smooth out the potatoes. Add cheddar cheese to taste. (or any cheese you fancy)

If everything is just made and its hot, you can broil for approx 10 minutes until golden brown.

Alternatively, this can be pre-made then cooled and heated up in oven at 180c (350F) for approx 35 - 45 minutes until hot and bubbly.

This is served with vegetables of your choice, generally here we use turnip (swede), garden peas or green beans and one other veg of choice.

A jug with gravy is usually set down to top off

This recipe can be tweaked according to taste. You can add a tablespoon or more of tomato puree or herbs of choice.
