WHAT'S FOR DINNER? | BETTER THAN TAKE-OUT! | NEW FAVS | NO. 71

This was one of our favorite weeks of dinners, EVER! We really tried some great new recipes this week and plan to keep all three in rotation at our house. I hope you'll try these easy dinner recipes with your families too!

SPICY TUSCAN SOUP:
1lb ground spicy Italian sausage
1 package of andouille sausage, sliced
1 package of mild Italian sausage, sliced
1 package of cooked bacon, chopped
1 large yellow onion, chopped
2-3 russet potatoes
1 large bunch of kale, chopped (remove stems)
6 cups of water
2 chicken bouillon cubes
1 can of sweet corn
1 tablespoon chili flakes
Garlic powder
32 oz heavy whipping cream

Sauté all sausages together, drain and set aside in bowl.

In the same pan, cut bacon into 1 inch pieces, cook to crispy, set aside.

In the bacon grease, add onions and potatoes. Cook until translucent.

In a pot, add water, bouillon cubes, and kale. Bring to a boil.
Once the kale is done, mix in all meats, onions and potatoes mixture, can of corn, garlic powder, chili flake, salt and pepper.
Once incorporated, add heavy cream last, mix well. Simmer for 20 min

We serve with homemade bread and it's delicious! This makes A LOT so if you don’t want a lot of leftovers, maybe half the recipe.
