One (8 tp 10 lb.) Capon

Brine for 8 to 24 hours then stuff with sweet onions and put in the smoker at 275 degrees for 30 minutes then reduce the heat to 225 degrees for 3 hours, then back to 275 degrees until the internal temp reaches 165 degrees. Let rest for 30 minutes then slice away!

Great Turkey and Chicken Brine Recipe!
1 gallon of "apple cider" (The kind you drink)
1/2 cup apple cider vinegar
1 cup Kosher salt
1 cup of brown sugar
8 cloves of garlic
2 tbsp. red pepper flakes
1 big red onion thick slicked
2 oranges quartered (squeeze some juice in the pot)
2 lemons quartered (squeeze some juice in the pot)
1 cup cubed up ginger root
A sprig each of rosemary, sage, and thyme
7 cloves, 1/4 cup pure maple syrup, 1/4 cup honey
Bring mixture to a boil for only 1 to 3 minutes then cool
Submerge your bird in the cold brine for 8 to 24 hours,
rinse then cook. Enjoy!
