Stuffed Summer Tomatoes! (Swaggerty's All Natural Sausage)
Start with 4 large tomatoes! (Not 6 like me... just 4!)
Core out the top then cut off the top about 1/4 of the way down
and keep the tops. Hollow out the inside of the tomatoes then
drain the pieces. Set aside!
Fry up 1/2 lb. of your choice of Swaggerty's all natural sausage.
Put the sausage in a fairly large bowl so you can mix everything
up after you add all the other stuff.
Add 1 package of cooked rice, 1 tsp. olive oil.. (I forgot)
2 tbsp. chopped parsley, 1 tsp. garlic powder, 1/4 tsp. salt,
1/4 tsp. pepper. (maybe a bit more pepper) .......
1/2 cup of Parmesan cheese, and the tomato pieces you saved
after hollowing out the 4 tomatoes.
Mix everything well and fill all 4 tomatoes slightly over the top
then add more cheese and put the top you cut off the tomato
back on top.
Bake at 350 for 20 minutes. When the tomatoes are in the oven
for 10 minutes fill the (core out) holes in the caps of the tomato with cheese and bake the rest of the remaining 10 minutes.
When you remove the tomatoes from the oven cut up fresh basil
and put some on top while the cheese is still hot!
Now let them cool for about 5 minutes before serving.
Enjoy!
