鳳梨咕嚕肉 (簡易家庭版) Sweet and Sour Pork

正宗鳳梨咕嚕肉 Sweet and Sour Pork
食譜 Recipe

材料:
去皮三層肉 400公克 (切長條塊狀)(或豬腩肉)
蒜碎 1大匙
鳳梨 約10 小塊
紅甜椒 1/3 個(切塊)
黃甜椒 1/3個(切塊)
青椒 1/3 個(切塊)
青蔥 2根(切段)
洋蔥 1/4個(切小塊)
玉米粉 適量
花生油 適量

醃肉材料:
鹽 1/4小匙
糖 1 大匙
醬油 1大匙
玉米粉 3大匙
花生油 1大匙
蛋黃 2個
醬汁:
鹽 1/4小匙
玉米粉 1大匙
糖 2大匙 (最好用片糖)
烏醋 2大匙
番茄醬 2大匙
烏斯特醬 1/2大匙
醬油 1大匙
水 50c.c.
鳳梨罐頭中的湯汁 50c.c.

做法:
在碗中加入醃料拌勻,把肉塊醃約30分鐘。
在碗中把所有醬汁材料拌勻備用。
在鍋中加足夠的油中大火加熱,把肉塊沾上玉米粉備用。
把肉塊分批放入鍋中,炸至金黃色,約5分鐘,撈起,轉大火,把所有炸肉放入油鍋炸一分鐘,瀝乾油份備用。
在鍋中加入2大匙油中火加熱,加入蒜炒香,(可加少許紹興酒),然後加入洋蔥、紅黃甜椒、青椒、鳳梨、蔥白炒軟,
再倒入醬汁拌煮至濃稠,試味。
關火一分鐘後,再加入蔥綠色的部份和肉塊拌勻即可。

Sweet and Sour Pork
Ingredients:
400g pork belly
10 pieces pineapple
1/3 red bell pepper (cut into pieces)
1/3 yellow bell pepper (cut into pieces)
1/3 green bell pepper (cut into pieces)
2 spring onion (cut into 2 inches length)
1/4 onion (cut into pieces)
corn starch
peanut oil

For marinade:
1/4 tsp salt
1 tbsp sugar
1 tbsp soy sauce
3 tbsp cornstarch
1 tbsp peanut oil
2 egg yolks

Sauce:
1/4 tsp salt
1 tbsp cornstarch
2 tbsp sugar
2 tbsp vinegar
2 tbsp ketchup
1/2 tbsp Worcestershire sauce
50c.c. water
50c.c. juice from the pineapple can

Method:

In a bowl, add the pork belly and season with salt, sugar, soy sauce, egg yolks, cornstarch, oil, mix well. Cover in the refrigerator for 30 minutes.
In a bowl, mix pineapple juice (from the can), water, salt, sugar, vinegar, Worcestershire sauce, ketchup, soy sauce, cornstarch and set aside.
Heat enough oil in a pot over medium high heat. Coat the meat with cornstarch and fry for around 4 minutes. Remove the meat and set aside. Higher the heat and then put the pork back and fry for one more minute.

Heat 1 tbsp oil in a pan (or wok) over medium heat. Stir in the garlic, fry until fragrant, and then add the onion, tomato, pineapple, garlic, green onion (white part) and cook until tender. Pour the sauce mixture into the pan, cook until thicken.
Off the heat, put the meat and green onion (green part) into the pan and mix well.
