Protein Pistachio Pudding Sheet Pan Pancakes🥞 EASY Weight Watchers Breakfast Meal Prep- WW Pancakes made with pudding mix! These lightened up pancakes are lower in calories and higher in protein than traditional pancakes. I meal prepped a WW friendly breakfast with these easy to make and clean up after, higher protein sheet pan pancakes! Ingredients:
2 1⁄4 cups dry mix Krusteaz Buttermilk protein pancake mix
2 scoopfuls (62 g ) Perfect Isopure, Creamy Vanilla
1 oz package Jell-O Pistachio reduced calorie instant pudding & pie filling
1 1⁄2 cups Unsweetened vanilla almond milk
1⁄2 cup Fage Total 0% Nonfat Greek strained yogurt plain
1⁄2 cup Unsweetened applesauce
4 large Eggs
1⁄3 cup Lakanto Monkfruit sweetener with erythritol, golden(or calorie free sweetener of choice)
2 tsp Almond extract
1⁄2 cup Shelled pistachio nuts, roughly chopped
70 gm Lily's White Chocolate Style Baking Chips
In a medium bowl, mix together pancake mix, protein powder and pudding mix. In a large bowl, add in remaining ingredients, minus the pistachios and chips, and mix well. Pour into dry ingredients and mix until well combined. Spary a 15X10 inch cookie sheet (Jelly Roll pan size) with cooking spray and line parchment paper. Spray top of parchment paper with cooking spray and pour batter on, smoothing out. Sprinkle pistachios and chips on top. Bake at 425 for about 10-15 minutes, or until slightly browned and the pancakes bounce back when pressed on.
Store leftovers in an airtight container in the fridge for 5-7 days. Microwave to reheat.
