Sesame Chicken Salad!! Fun, fresh, filling, and flavorful!!

Welcome back to MARIA'S KITCHEN Presents! Today, we're making a yummy Healthy SUMMER salad, or anytime salad 🥗 😊 To be more specific, it's a SESAME CHICKEN SALAD! It’s a wonderful, flavorful, delicious, fresh, cool, crunchy, tasty salad! Also very filling and easy to make. A fresh-tasting main-course. For a quick prep, you can even substitute with bagged shredded cabbage. This would be great for lunch, dinner, parties, and family get-togethers. INGREDIENTS:
1 whole green cabbage 2 cups sliced and rinsed
1/4 cup rice vinegar no sugar added
1/4 cup Low-sodium soy sauce
1 tsp sesame oil
2 TBSP peanut butter
1 garlic clove minced fine
1 tsp ground ginger or cut-up fresh ginger
1 TBSP sugar or 1 TBSP honey or agave
1/2 tsp red pepper crushed red pepper flakes
2 cups shredded cooked chicken or rotisserie (video link attached to this video how to cook chicken)
1 cup sliced thinly RED bell pepper
1 cup sliced thinly purple onion
3/4 cup to 1 cup of shredded carrots
1/8 cup green scallions sliced (2 scallions)
2 Celery stalks sliced
1/2 tsp salt
1/2 tsp black pepper

OPTIONAL:
1 can rinsed and drained Mandarin oranges
1 TBSP Sesame seeds
2 corn tortillas for fried tortilla strips
2 Tbsp vegetable oil for frying tortilla strips

DIRECTIONS:
Boil 4 chicken thighs or you can use rotisserie chicken.
First cut up your 2 corn tortillas into 1 and a half-inch strips. Fry them in 2 Tbsp of vegetable oil on a low flame till brown and crispy. Drain them on a paper towel and set aside sprinkle with salt.

Now let’s make the dressing. In a bowl, add in 1/4 cup rice vinegar, 1/4cup soy sauce, 2 TBSP peanut butter, 1 tsp sesame oil, 1 tsp ginger, 1 tsp garlic, and 1 Tbsp sugar. Mix very well until smooth and creamy. Set aside.

Slice all your vegetables (cabbage, red bell pepper, shredded carrots, celery, green scallions, purple onion, and set aside.

Now, let's start putting it together. In a large bowl, pour in the dressing. Next, add in the shredded chicken and toss it around until combined well. You can use plastic cooking gloves if you don't like to touch the food with your hands. Now, add in all the vegetables and toss the salad to combine everything. Then, add the salt and pepper, and toss the salad again until everything is combined very well and evenly distributed. Optional: You can garnish with mandarins oranges, crunchy fried corn tortilla strips, and sesame seeds. Each of those garnish adds a nice burst of flavor, and crunch to the salad! It tastes amazing all together.

You did it!!!! It's best eaten fresh and can be refrigerated up to 2 days. Makes about 6-8 servings😊
