This was so fun to make!

INGREDIENTS & NOTES
#1 Beigli
FOR THE DOUGH
80ml (1/3 cup) non dairy milk
1 tbsp powdered sugar for yeast mixture
3 tbsp apple sauce
1 packet dry active yeast (7g = 0,25oz)
270g flour (2 cups + 3 tbsp) (+ a little more for the surface+)
3 tbsp powdered sugar for flour bowl
1/3 tsp salt
100g vegan butter, cold and cut into cubes
1 tsp orange zest
1 tsp vanilla
FOR THE FILLING
200g (7oz) poppy seeds
180ml (3/4 cup) non dairy milk
70g (1/2 cup) powdered sugar
1 tsp lemon zest
1 tsp vanilla
Brush with: 2 tbsp non dairy milk + 1 tbsp date syrup
*knead until not super sticky anymore, add a little more flour if needed
Yields 2 rolls
#2 Lebkuchen
200g ground almonds (2 cups)
100g finely chopped almonds (3/4 cup)
200g ground hazelnuts (2 cups)
1/4 tsp salt
80g powdered sugar (1/2 cup + 1 tbsp)
2 tsp gingerbread spice*
1 packet of vanilla sugar (or 1 tsp vanilla)
80ml chickpea water (1/3 cup)
2-3 tbsp date syrup (or maple or rice syrup)
A few almond aroma drops
A few rum aroma drops
2 tbsp candied chopped orange**
2 tbsp candied chopped lemon**
About 15 oblates wafers
For the glaze:
150g dark chocolate chips, melted (5.3oz)
A pinch of cinnamon
1-2 tsp vegan butter
Yields around 15 ginger bread cookies
*or 1/4 tsp each: cinnamon, ground ginger, cloves, cardamom plus a pinch of nutmeg
** sub w 1/2 tsp fresh lemon and orange zest
Adapted my Mum’s recipe :)
#3 Nanaimo Bars
FOR THE BASE:
1/3 cup (85g) vegan butter, diced into pieces
1/4 cup (30 g) unsweetened cocoa powder
(3.5oz) graham crackers or other vegan cookies of choice (90g)
2/3 cup (70g) quick cooking oats OR sub w 70g more vegan cookie crumbs
1/4 tsp salt
1 1/2 tbsp flax seeds
1 cup (80g) sweetened shredded coconut 80g
3/4 cup (100g) almonds, finely chopped
FOR THE FILLING:
2/3 cup (150g) vegan butter, softened
1 pack (37g or 1.3oz) vanilla custard powder
1 1/2 cups - 2 cups (180g - 240g) powdered sugar, added 1/2 cup at a time
4-5 tbsp vegan cream added 1 tbsp at a time
FOR THE TOPPING:
150g (5.3 oz) dark chocolate chips, melted
1-2 tsp vegan butter / coconut oil
Yields a 8 inch / 20 x 20 cm baking tin
#4 Lussekatter
180ml lukewarm non dairy milk (3/4 cup)
1/2 teaspoon saffron threads
50g sugar (1/4 cup)
1 (7 grams or 1/4-ounce) packet active dry yeast
415g all-purpose flour (3 1/2 cups or 14.6oz)*
3/4 tsp salt
1/2 tsp cardamom
1 tsp vanilla or 1 pack vanilla sugar
1/4 cup (4 tablespoons, 56g) vg butter, softened
2 1/2 tbsp vegan sour cream (or thick yogurt)
1 small handful of raisins (or choc chips)
*would almost recommend weighing your ingredients when baking w a scale rather cups !
Yields 12 - 14 buns
#5 Aletria
1 cup water (250ml)
1 cup milk (250ml)
1/2 cup vegan cream (125ml)
1/2 tsp lemon zest
2/3 tsp cinnamon OR 2 cinnamon sticks
1 tsp vanilla
1/4 tsp salt
1/4 tsp turmeric, optional
1/4 cup + 1 tsp (55g) sugar
100g - 125g glass noodles / angel pasta (3.5 oz - 4.4 oz)
4 tbsp of corn starch OR vanilla custard powder mixed into 60ml (1/4 cup) water
(4 tbsp = a 40g packet of custard powder)
1 handful raisins, optional
Mix frequently all throughout !
Yields a 20 x 20 cm (8 x 8 inch) baking tin
