How To Make Gorditas Enchiladas (Gorditas Norteñas) and Salsa Macha

Hello my beautiful fam! Welcome back to my kitchen today I’m going to share with you how to make the best gorditas enchiladas or gorditas norteñas, this is how my grandma used to make,them, well the way she prepared her masa, because she used to cook them in a oven outside her backyard , horno de leña, i remember She used to ask me what I wanted from Mexico and that was one of the first things I used to ordered 😭 memories memories... the best part about cooking that through our memories we are able to reconnect! Ingredients: makes about 13 gorditas
Salsa de aceite ( super spicy oil salsa)
2 oz 60 chiles de árbol
5 garlic cloves
1/4 onion
3/4 cup vegetable oil
3/4 cup olive oil
1 tortilla
1/2 cup sliced almonds
2 tbsp sesame seeds
1/2 tbsp salt
Filling: I also use this for my roll tacos 😉
1 lb ground beef
3 medium potatoes
1 tomato
1/2 white onion
Garlic salt pepper
Masa:
4 cups Maseca
1 cup flour
1 tbsp baking powder
1/2 tbsp salt
8 New Mexico, California or guajillo chile pods
1/4 white onion
2 garlic cloves
1/4 tsp cumin
1/4 tsp oregano
1/4 tsp black pepper
Oil
Toppings:
Lettuce
Tomatoes
Crema mexicana
Queso fresco
