Spicy Bacon Ciabatta
This is a very tasty and spicy ciabatta bread!
It's a fantastic match with beer. (๑•᎑•๑)

■ Dough formula
B's(%): 100.0%, Tr(g): 300.0g Bread flour(strong flour)
B's(%): 1.7%, Tr(g): 5.1g Salt
B's(%): 1.0%, Tr(g): 3.0g Instant Dry Yeast
B's(%): 6.0%, Tr(g): 18.0g Olive oil(extra virgin)
B's(%): 83.0%, Tr(g): 249.0g water(24°C)
■ Prepare toppings|Please see video
1. Baked Bacon: 45g
2. Peperoncino: 0.8g
■ Process, room temperature: 26.0℃

1. Pour water into the bowl.
2. Add instant dry yeast and disperse in water.
3. Add salt and dissolve.
4. After adding olive oil, mix evenly.
5. After adding strong flour,
Mix evenly until no flour is visible (dough temperature: 25℃).
6. After 30 minutes of rest, the first fold (folding)
At this time, the prepared bacon, peperoncino are sprinkled evenly in the dough and folded.

8. Fermentation: 1 hour 30 minutes at room temperature

10. Second fermentation: 1 hour
11. Put the dough in the Rofco oven preheated to 250℃
12. baking for 14 minutes.
■ Caution: Always be careful when using the oven.
(Because it is very hot, use it after wearing very thick oven gloves)
