Butter and Milk loaf pan Bread|Fluffy and Soft|Rofco Oven Test
I made loaf pan bread with plenty of butter and milk.
The flavor of butter stimulates the appetite. It has a very soft texture. (๑•᎑•๑)
It's simple and easy to make bread at home!
A bread mold from MATSUNAGA is used.
Mold frame size: 95 x 185 x 90mm

■ Dough Formulation|about 450g
B's(%): 32.0%, Tr(g): 73.6g water (25℃)
B's(%): 2.0%, Tr(g): 4.6g Instant Dry Yeast
B's(%): 12.0%, Tr(g): 27.6g Sugar
B's(%): 1.8%, Tr(g): 4.1g Salt
B's(%): 30.0%, Tr(g): 69.0g Milk
B's(%): 18.0%, Tr(g): 41.4g Butter
B's(%): 100.0%, Tr(g): 230.0g Strong wheat flour (Bread Flour)
■ Process|Room Temperature : 26℃
1. Put water in the bowl.
2. Add instant dry yeast and mix well.
3. After adding sugar, dissolve in water.
4. After adding salt, dissolve in water.
5. Add milk.
6. Add melted butter (35℃).
7. After adding the flour,
Mix evenly until no flour is visible (dough temperature 26℃).
8. After 15 minutes of rest, the first fold (folding)
9. After 15 minutes of rest, the second fold (folding)
10. refrigerated fermentation: 2℃, 9 hours
11. After refrigeration fermentation,
Rest the dough for 2 hours at room temperature: dough temperature about 18℃
12. Dividing the dough: 3 divisions
13. After rounding the dough, rest 15 minutes
14. Shaping : Please Refer to the video
15. Second fermentation: 1 hour 30 minutes at room temperature
16. Put the dough into the Rofco oven preheated to 190℃
17. Lower to 150℃ and bake for 23 minutes
■ Caution: Always be careful when using the oven
(Because it is very hot, use it after wearing very thick oven gloves)
