Tonight I got some Pork Cracklins and Fried them up and made Corn Pones. Don't forget to put a little butter on them when they are frying yall! What is a Pork Cracklin? It's Pork Fat fried up with skins! Boy it is so good it is sinful. They are even better when they are at room temperature. WOW!!!

I am a southern girl born in raised in Collard Valley in Polk County Georgia. We went to church on Sunday, school during the week, the grocery store on Friday’s and that was our life. No vacations, no camping, just plain old southern country people
NOW FOR THIS FAMILY RECIPE:
2 CUPS CRACKLINS
1 2/3 CUP CORNMEAL MIX (WHITE LILY BUTTERMILK)
1 CUP WATER
1 CUP MILK
1/2 TSP. PEPPER
1/2 TSP. SALT
1/2 STICK BUTTER
COOKING OIL
In a skillet add the cracklins and heat up until hot. Add water and milk and simmer for 3-5 minutes. Add salt and pepper and then add cornmeal. Mix well. Make patties 1/2 inch thin and fry in hot oil with a little butter. Fry until very brown. Take out and put on plate with paper towel on top. Enjoy!
