How to cook a tri tip on the Masterbuilt Gravity Series 560 charcoal grill | Reverse sear.

In this video, we cooked a Tri-tip (Rump Tail) with a Chumichuri sauce on the Masterbuilt Gravity Fed Series 560 Smoker/Grill.
There are lots of ways you could have cooked the Tri-tip and this is our preferred method.
We would love to hear how you like to cook Tri-tip. Please let us know your preferred method in the comments.
Method:
Setup the grill with the grates split for smoke/sear configuration
Set the grill temperature to 250f/121c
When the grill is up to temperature, place the Tri-tip on the smoke side.
Mop every 10-15 mins until internal temperature reaches "Rare" 116f/45c - Remember to flip and do this on both sides.
Once the rare temperature is met, take the Tri-tip off and increase the grill temperature to a very high heat. 600-700f/315c-370c
Place the Tri-tip back on the grill until it reaches your preference. This was the top end of medium rare 135f/60c - Roughly 2 mins per side.
Dry-Brine
I used the Killer Hogs "The A.P Rub" - You can use anything that has Salt, Pepper, Garlic.
Rub
We used the CountryWoodSmoke - "Mocha Rub". - You can used your favorite beef rub
Then added some Angus & Oink "Texas Steak" for some great texture.
Basic Mapping sauce : Recipe by Malcolm Reed
- 3/4 cup Balsamic Vinegar
- 1/2 cup Olive Oil
- 1/2 cup Water
- 3 cloves Garlic minced
- 1/2 teaspoon Kosher Salt
- 1/2 teaspoon Coarse Ground Black Pepper
- 1/2 teaspoon Crushed Red Pepper
Chimichurri Sauce: Recipe by Sam the Cooking Guy
4 cloves garlic
1/3 cup olive oil
1/2 tablespoon each Kosher salt, cumin and crushed red pepper
1 cup each Italian parsley and coriander (cilantro)
Juice of 1 lemon
