This creamy Tuscan Chicken brings the summer of the Mediterranean into the kitchen – really juicy roast chicken, creamy tomato basil parmesan sauce with onions red pepper, and a little garlic

Ingredients
Chicken breasts cooked at internal temp 165F – 75 C
Butter
Olive oil
Salt
Pepper
Paprika for chicken and in the dish
2 cloves garlic minced or more
1 cup -Chopped tomatoes – sundried for better flavour
1 tsp oregano
1 heaped tbsp tomato puree/paste
1 red pepper sliced
1 onion sliced
1 -2 heaped tbsp Basil Pesto – it contains parmesan and all the best flavour
1 ½ cups chicken or veg stock – made from a cube or fresh
5 tbsp cream of anything soup powder – https://youtu.be/bCyff_ofG8Y
Spinach is torn up
Serve up with fresh parmesan – on pasta or rice
