Tonight I am making a recipe that is a Soul Food Recipe. I don't cook a lot of soul food but I sure like some of it. This Mustard Fried Chicken is really good and I think you will add it to your favorite family recipe list after you try it. Now Chris has a famous fried chicken recipe in our Volume 2 Cookbook that we sure do love, but we think this is a good change up and will make it for the kids and with chicken fingers too. I am a southern girl born in raised in Collard Valley in Polk County Georgia. We went to church on Sunday, school during the week, the grocery store on Friday’s and that was our life. No vacations, no camping, just plain old southern country people
NOW FOR THIS SOUL FOOD RECIPE:
MUSTARD FRIED CHICKEN
5 CHICKEN THIGHS (BONE IN-SKIN ON)
CHRIS’S SPECIAL SEASONINGS
ONE PLATE: 1 1/2 CUP SELF-RISING FLOUR, 2 TBSP. CHRIS'S SPECIAL SEASONING, 2 TSP. GROUND MUSTARD WHISK TOGETHER WELL

GALLON ZIP LOCK BAG: CHICKEN PIECES AND PLENTY OF FRENCH'S MUSTARD OR ANY YELLOW MUSTARD
Put Chicken in Gallon bag with mustard and let it sit out at room temperature for one hour. Then coat each piece of chicken with flour mixture and let it sit for 10 minutes before frying.
Pour peanut oil in deep iron skillet or wok. Add it about 3" deep so chicken can fry in deep oil. If you do not have a deep enough skillet or wok use a large pot. Preheat oil to 350 degrees and drop chicken.
Drop chicken and fry for 18 minutes for thighs. I prefer to flip them after the first 8 minutes and reduce temp a little for second fry so they don't get to brown. Take out and place on wire cooling rack with parchment underneath or paper towels to catch oil. Do not rest chicken on paper only on rack. Let chicken rest and cool before serving.
Chicken internal temperature should be 180
Degrees Fahrenheit.

CHRIS'S SPECIAL SEASONING
2 TSP. CAYENNE PEPPER
2 TSP. BLACK PEPPER
2 TSP. WHITE PEPPER
4 TSP. PAPRIKA
4 TSP. SALT

Place seasonings in a small container with lid and shake well. Put seasoning in a salt shaker and label for frying foods. This is amazing on our Famous Fried Chicken!
