Farinata (Chickkpea Flour) Veggie Pizza Take Two

Our second attempt at making Farinata style veggie pizza. Our goal is to be able to lift the creation out of the skillet in one piece.

1 ½ Cup Chickpea Flour
2 Cups warm water

Combine then set aside a minimum of 30 minutes up to 2 hours. Some recipes indicate that you can wait 5 or 6 hours. Skim any foam that develops on the top of the batter.

Add 3 Tablespoons Olive Oil, 1 ½ Tsp Salt. A few rosemary leaves that have been minced.

Preheat a 12-inch cast iron pan for 20 to 30 minutes on Ooni low. Take the pan out of the oven and add enough oil to coat the pan. (at least 2 Tablespoons).

Add chopped raw vegetables until the bright green stage. Then add sliced mushrooms. (I pre-cooked mushrooms with shallots, salt and pepper, and thyme to remove moisture.)

Pour in your batter. Cook until the crush pulls away from the sides and the Farinata is firm. It will be brown on top.

If desired, add shredded cheese like parmesan or Grana Padano.

Serve warm.
