How To Cook A Pizza in the Ooni Koda 16.
How to cook a pizza is the focus of this video. Twelfth Avenue Cuisine answers the most common questions asked on the Facebook Ooni Communities. How can I make a pizza that isn’t burned? Why is my crust undercooked and doughy? How can I prevent my pizza from sticking on my peel?
· Heat oven on high at least 20 minutes
· Turn oven to the Ooni low before you start to stretch the pizza
· Dust your peel with Semolina or a mix of 50/50 Semolina and flour
· Flour your surface that you use to make your pizza and make the pizza on the board or table.
· Flour your pizza and stretch your dough into a pizza by pressing your hands in the center and keeping your fingers away from the edge.
· Add sauce lightly. You should be able to see the crust through the sauce. Leave a margin around the rim of the pizza.
· If you use parmesan, add it first because it burns easily.
· Low moisture whole milk mozzarella is preferred. I think it has the best taste. Part-skim or pre-shredded mozzarella can be used but the pre-shredded burns more easily due to the anti-caking agent that coats the cheese. It is a very convenient product and I am not criticizing its use.
If you use fresh mozzarella, cut it in pieces and let it drain on paper towels before using to prevent having a wet pizza.
· Add other toppings: lightly thinly sliced mushrooms, peppers, and onions can be added raw.
We prefer to precook bacon or sausage and drain on paper towels to reduce the amount of grease on the pizza.
· When your pizza is complete, drag your pizza onto your semolina-dusted peel. Give it a jiggle to make sure your pizza is loose.
· Launch your pizza.
· Rotate your pizza 180 when the crust starts to rise. We retrieve the pizza with a metal peel, use tongs to move the least cooked portion of the crust so it will face the flames of the oven. Rotate again if you want more leoparding.
· Place your cooked pizza on a wire rack for a minute or two to retain crispness. This prevents steam from building up under the crust.
Move your pizza to a board to cut. We prefer the Ooni Rocker Blade. It is a heavy-duty blade that cuts right through the toppings without disturbing the appearance of your pizza. We have tried a lighter rocker blade that did not work as well.
