Vegan Meal Ideas for Fall + Winter!
Today’s video features my favorite noodle soup, cozy jackfruit pasta and a slightly different vegan buddha bowl. Perfect for fall and winter dinners.

INGREDIENTS:
#1 Easy Homemade Pho
2 onions, roughly chopped
2 cloves garlic
a 2 inch piece of ginger (5 cm)
2 tsp olive or coconut oil, or sub with a few tbsp water
spices: 2 cinnamon sticks, 2 star anise, 1 tsp whole cloves, 1 bay leaf
4 cups vegetable broth (1 litre) + 2 cups water (500ml) , more water if needed
2 ½ tbsp tamari, soy sauce
1-2 tsp maple syrup, optional
salt to taste, if needed
200g of rice noodles, more or less if desired (7oz)
Also for each serving:
the mushrooms and tofu
a squeeze of lemon juice
leafy greens, sprouts ...
Pan Fried Mushrooms + Tofu:
1 block smoked tofu
a handful of cremini mushrooms
1 tsp oil
Baked Mushrooms + Tofu:
1 block smoked tofu
a handful of cremini mushrooms
½ cup spelt flour (60g)
½ cup + 2 tbsp unsweetened non dairy milk (125ml + 2 tbsp)
½ tsp salt
½ tsp baking powder
1 tsp sriracha
1 tbsp fresh lemon juice
→ yields 4 big bowls of soup
#2 Cozy Jackfruit + Lentil Pasta
200g cooked jackfruit (7oz)
1 onion, finely chopped (i didn’t do a good job in the video lol)
1 clove of garlic, minced
1 tbsp tomato purée
2 tbsp ketchup
½ tsp smoked paprika
pepper
salt, if needed
½ cup vegetable broth (125ml)
1 cup passata (250ml)
½ cup red lentils, dried (100g)
1 cup vegetable broth (250ml)
250g pasta (8.8 oz)
→ serves 3
#3 the German Buddha Bowl
3-4 small - medium sized potatoes
2 cups sauerkraut, cooked (290g)
2 onions
1 tbsp agave or maple syrup
1-2 tsp vegan butter
greens
1-2 cups brussel sprouts (100-200g)
1-2 tsp olive oil
salt
vegan sausages
dressing: 1 tbsp plain hummus + 1 tbsp lemon juice + 1 tsp agave + 1 tsp mustard
→ yields 2 bowls
