RECIPES
*Zucchini Oats*
1/4 cup oats
1 cup water (I do about 4 to 5 parts water to 1 part oats / use more or less depending on desired consistency)
1/2 zucchini, grated
1 banana
1/2 cup frozen wild blueberries
Cinnamon, cardamom, vanilla
Combine all ingredients with 1 and 1/2 cup water, bring to boil, stir. Once cooked, add desired toppings.
*Pico De Gallo*
(This is great with black beans / rice / quinoa / over salads etc..)
1/2 red onion
Juice of 2 limes
5 tomatoes
1/2 jalapeño / or 1/2 tsp chili flakes
1 clove garlic
1 bunch cilantro
*Cauliflower Sweet Potato Soup*
2 large sweet potatoes
1 head of cauliflower
4 cloves garlic
1 onion
3 cups veggie stock (low sodium)
1 cup water
Parsley (or spring onion) to garnish
Directions
1. In a large pot, fry sliced onion & minced garlic for a couple of minutes
2. Add sweet potatoes, cauliflower, veggie stock and water
3. Cook for about 20 minutes, until veggies are tender
4. Blend with immersion blender (or transfer to food processor or blender). Blend till smooth.
5. Garnish with fresh herbs if desired (like parsley, cilantro or spring onion). Enjoy! :)
