RECIPES

*Zucchini Oats*
1/2 cup oats
1/2 zucchini, grated
1 banana
1/2 cup frozen wild blueberries
Cinnamon, cardamom, vanilla

Combine all ingredients with 1 and 1/2 cup water, bring to boil, stir. Once cooked, add desired toppings (today I added strawberries, ground flax, chia seeds).

*Pico De Gallo*
1/2 red onion
Juice of 2 limes
5 tomatoes
1/2 jalapeño / or 1/2 tsp chili flakes
1 clove garlic
1 bunch cilantro

*Guacamole*
1 avocado
1/4 red onion
1 garlic, minced
Juice of 1 lime
1/2 large tomato
1/2 zucchini (or 1/4 large cucumber)
1/2 bunch cilantro / approx 1/4 cup chopped

Salt & pepper to taste
Can also add: jalapeño or red pepper flakes for some spice!

*Black Beans*
1 cup dry beans
4 cups water
1 onion
2-3 garlic cloves

Soak beans overnight, change water in the morning, allow to soak again until ready to prepare.
Bring all ingredients to boil, then turn down heat, and allow to cook for about 1 to 1.5 hours / until beans are tender. Store in glass container in fridge.

*Salad Dressing Mentioned*
(Experiment with quantities to your liking)
Juice of 1 to 2 lemons
1 tbsp maple syrup or honey
1 tsp dijon mustard

*Oatmeal Banana Cookies*
1 3/4 cups oatmeal
4 ripe bananas
1 tbsp cinnamon
1 tsp vanilla
(Optional add ins: dates, raisins / chocolate chips / nuts…)

Mash bananas and combine rest of ingredients.
Bake in oven at 350' F (180' C) for 20-30 mins / until tops are no longer sticky
Flip and bake for another 5 - 10 mins
