How To Make Mozzarella At Home (without a microwave)
Living in Italy, I've gotten so spoiled by the fresh fior di latte and mozzarella di bufala, which I can find just around the corner from where I live. But whenever I leave, I'll be so happy to know that making mozzarella at home is, indeed, doable!

I've learned some of the techniques from the cheesemakers in my neighborhood, combined that with my former cheesemaking experiences and general cheese knowledge, and watch the video to see how to make mozzarella at home!

Gear:
Digital thermometer (or a candy thermometer)
Long knife (or offset spatula)
Spatula
Ladle
Slotted spoon
Plastic, heat-proof gloves
Large pot
Large bowl and a colander that fits into it
Ingredients:
1 gallon (4.5 liters) whole milk (pasteurized is okay, avoid ultra pasteurized [UHT])
1.5 teaspoons citric acid
¼ (1.2 milliliters) teaspoon rennet
1 teaspoon fine sea salt
