PS - I mention Tropea Onions in the video but I don't go into detail on them. If you've never heard of them, you should definitely check them out; they're a special allium that's a bit like a red onion met a shallot and had a baby. They're from Calabria and they're very sweet. They're so beloved that they're known as "la regina rossa" -- the red queen!
