3 Tbsp Oil (Notes)

1 Inch Fresh Ginger grated or finely minced
1-2 Bay Leaves
1 Cinnamon stick 2 inch piece
3 Pods Green Cardamom
4 Whole Cloves
1 Tsp Cumin Seeds
1 Tsp Fennel Seeds
1 1/2 Tsp salt adjust to taste
2 1/2 Cups water

½ C Carrots Diced
2 Tbsp Golden Raisins
½ C Peas
