Easy Egg dish for any time - Menemen - The Turkish Egg Scramble
Here is how to make Menemen - an easy and filling egg dish from Turkey. It takes less than 30 minutes to make with everyday ingredients in the kitchen.

Serves 2
4 Eggs
1 Onion
½ Bell pepper
2 Tbsp Olive oil
1 Large Tomato l
½ Tsp Dried Oregano
1/2 Tsp Dried Thyme
½ Tsp Paprika
Sea salt and Pepper To Taste
1 Serrano / Jalapeno Pepper (optional)
Chop the vegetables.
Heat oil in a large sauté pan. Add onion and cook till softened. Sprinkle a little salt on top.
Add the peppers and sauté for 1 to 2 minutes.
Add the chopped tomatoes and spices. Stir. Cover and cook for 5 minutes until the tomatoes become hot and mushy.
Mash the tomatoes gently with the back of a ladle. Taste and adjust salt and pepper. Reduce the heat to low.
Break the eggs one by one into this thick sauce. Use the spoon to break the yolks and lightly stir the eggs into the tomato mixture. Place the lid back on and cook over medium heat for about 2 to 3 minutes or until the eggs are barely set..
Serve hot with a sprinkling of fresh herbs, cheese or chili flakes.
