🌯 Chicken Cheesy Bean Burrito
Ingredients:
- 1 lb ground chicken
- 1 diced onion
- Avocado oil
- 1 can black beans, drained
- Garlic powder
- Onion powder
- Tomato bouillon
- Chili lime seasoning
- Taco seasoning
- Splash of chicken stock (optional)
- Juice of 1 lime
- About ½ cup shredded cheese
- Flour tortillas
Smashed Avocado:
- Avocado
- Lemon juice
- Salt
Quick Pico:
- Tomatoes
- Jalapeños
- Green onion
- Lemon juice
- Salt
Instructions:
1. Sauté onion in avocado oil until soft.
2. Add ground chicken and cook until browned.
3. Season to taste.
4. Stir in drained black beans. Add chicken stock if needed.
5. Finish with lime juice and cheese.
6. Smash avocado with lemon juice and salt.
7. Mix tomatoes, jalapeños, green onion, lemon juice, and salt for the pico.
8. Build burritos and optional: toast until crispy 🔥
