Easy Chiles Rellenos Recipe with Homemade Ranchera Sauce
🌶 Chiles Rellenos with Homemade Ranchera Sauce
One of my favorite combo plates at any good Mexican restaurant always includes a chile relleno. There’s just something about that smoky roasted pepper, stuffed with melty cheese, wrapped in a fluffy egg batter, and smothered in a rich red sauce—it’s comfort food at its finest. So you know I had to make it at home.
🌶 Ingredients
Ranchera Sauce:
• 8 Roma tomatoes
• 1 jalapeño (deseeded for mild, keep seeds for heat)
• 1 bunch cilantro
• ½ white onion
• Garlic powder, to taste
• Tomato bouillon, to taste
Chiles Rellenos:
• 6 poblano peppers
• Quesadilla cheese, Oaxaca, or Monterey Jack
• 3 eggs, separated
• ½ cup all-purpose flour
• Pinch of salt
• Neutral oil for frying
🫙 Instructions
1. Make the Ranchera Sauce
Blend tomatoes, jalapeño, cilantro, onion, garlic powder, and tomato bouillon until smooth. Pour into a saucepan and simmer over medium heat for about 15–20 minutes until the sauce thickens and deepens in color.
2. Roast the Poblanos
Roast the poblano peppers over an open flame until the skins are charred and blistered. Place them in a bowl and cover with foil to steam for about 10–15 minutes. Gently peel off the skins, make a small slit down the side, and remove the seeds.
3. Stuff the Peppers
Fill each chile with cheese and secure with a toothpick if needed. Set aside.
4. Prepare the Egg Batter
Separate the eggs. Beat the egg whites until stiff peaks form. Add the yolks one at a time, gently folding them in until the batter is light and fluffy.
5. Coat and Fry
Mix the flour with season salt. Lightly dredge each stuffed chile in the flour and shake off the excess. Dip into the egg batter and carefully place into hot oil. Fry until golden and crispy, then set aside to drain on a rack in a warm oven.
6. Serve
Place the chiles on a plate and spoon the warm ranchera sauce over the top. Serve immediately while the cheese is melted and the coating is still crispy.
