Red Lentil & Quinoa Stew Recipe:
Red lentil, quinoa veggie stew: (makes 4-5 ish servings, with greens)
- 1 cup split red lentils
- 1 cup dry quinoa
- large diced white onion
- 2-3 large carrots diced
- as much kale as you can fit in (I used a whole large bag, remember it wilts!). You could also use spinaaaaach or broccoli
- large can of chopped tomatoes
- 1 tsp cinnamon
- 1 tsp turmeric
- 1 tsp cumin
- 2 -3 tsp ground garlic (or 2-3 cloves of minced fresh)
- 1 cube veggie stock with 5-6 cups water
- salt & pepper to taste
- make as shown (I used a little oil then extra water for frying the veggies)
- top with diced soft avocado & a drizzle of good good tahini :)
