Peanut butter, Coconut, Sweet potato & chickpea curry:
-1 giant sweet potato (or 3-4 small/medium ones)
- green beans (broccoli works well here too as it soaks up sauce)
- baby sweet corn
- 1 large white onion
- + any other veggies of your choice
- 2 cans full fat coconut milk
- 3 TBSP crunchy peanut butter
- 1 can rinsed & drained chickpeas
- 2-tsp garlic powder
- 2 tsp cinnamon
- 3 tsp sweet smoked paprika
- salt & pepper to taste
- olive oil for frying the onions (use water if preferred)
- make & prepare as shown :)
Crispy sweet & nutty tahini tofu:
- 1 large block extra firm tofu
- 4 TBSP good runny tahini
- 2-3 TBSP coconut aminos
- salt & pepper
- mix well as shown & roast in a hot oven - 250'F for 25 minutes
- use it as you wish, but it's best the 2 ways I showed it :)
- it's the best just with sweet potato & avocado too for breakfast!
Roasted pesto pasta salad:
- 4-5 large bell peppers (any colours but green!)
- large punnet of button mushrooms
- 1 large aubergine (eggplant)
- 1 250g jar of sundried tomato & garlic pesto (or any red vegan pesto)
- 500g chickpea pasta (or any pasta)
- soft creamy avocado & runny tahini to serve :)
- & trust me it's even more delicious cold!
