Hello and welcome back to a cozy ‘What i eat in a week” video! There’s lots of vegan comfort food and lots of healthy vegan meals in this one. Banana Bread Oatmeal, Lemon Poppy Seed Crumble Cake and Lazy Lentil Soup to just name a few.

INGREDIENTS

#1 Quarantine Green Smoothie Bowl

2 big handfuls frozen broccoli
juice ½ lemon
4-5 canned pineapple rings (the one that comes in juice, not syrup)
⅓ cup pineapple juice (or apple juice) (80ml)
3 tbsp unsweetened apple sauce
2 tsp semi ground flax seeds
extra water or ice, optional
also: granola, frozen berries for the top

#2 Quick Couscous Bean Stir Fry

⅓ cup couscous (~60g)
⅔ cup hot boiling water (190ml)
½ tsp vegetable broth powder
½ tsp garlic spice mix

1 red onion
oil for the pan
1 tbsp tomato purée
~ ½ can kidney beans (~120g)
~⅓ cup frozen peas (50g)
1 tbsp ketchup
frozen parsley
1 tbsp white wine vinegar or 1 tbsp lemon juice
1 tbsp nutritional yeast

sesame for serving, a few carrots, cut into sticks, optional

*serves 1

#3 Banana Bread Oatmeal

½ cup small cut oats (45g)
¼ tsp salt
¼ tsp cinnamon
handful of raisins
½ tsp vanilla
1 banana: 1 half mashed, 1 half for the top
1 cup non dairy milk (250ml), more if needed
walnuts, crushed for the top
nut butter of choice (can recommend cashew very much)
sweetener of choice

#4 Late Night Lentil Soup

1 onion, finely minced
2 cloves of garlic, finely minced
1 tbsp olive oil
¼ tsp each paprika, black pepper, turmeric; pinch of cinnamon
1 tbsp tomato purée
2 ½ cups vegetable broth
1 cup passata or 1 can diced tomatoes or 1 cup pre-made marinara (~250ml)
1 cup red lentils (200g)
extra water, if needed
1 tbsp ketchup
fresh parsley, lemon juice for serving

#5 Lemon and Poppy Seed Crumble Cake

crust and crumbles:

500g flour, spelt or all purpose or a mix of both (4 cups)
⅓ tsp salt
½ tsp baking powder
150g powdered sugar (1 ¼ cup)
225 vegan butter, cold, cut into cubes
5-8 tbsp non dairy milk, add 1 tbsp at a time (you might not need all 8 tbsp, depending on what flour you're using; spelt flour tends to need more liquid than regular)

filling:

2 cups non dairy milk (500ml), more if needed
½ cup + 1 tbsp sugar (115g)
1 tsp vanilla
½ tsp lemon zest
40g corn starch + 60ml water
150g spelt semolina* (or polenta possibly, haven’t tried that yet) (5.29oz)
157g poppy seeds (1 ⅓ cup)

*I’ve also made this cake using wheat bran instead. If that’s what you’re going for, then you’ll only need 375ml (1 ½ cups of non dairy milk)

**use a springform pan between 25cm - 30cm

#6 Semolina Breakfast Pudding

¼ cup spelt semolina (40g)
1 cup non dairy milk (250ml)
¼ tsp vanilla
pinch of salt
2 tsp maple syrup
toppings: frozen berries, nut butter, chia seeds
