The banana bread is tasty, naturally sweet, and has added fiber and protein which will help blunt a glucose spike. For Mallory, the bread always scores a 10 with her Levels app and makes for a great breakfast on the go.
Chocolate Banana Bread
Ingredients:
3 organic, ripe bananas
5 eggs
3 tbsp ground flaxseed
1/4 cup coconut flour
1 scoop chocolate protein powder
1 tsp baking soda
splash of vanilla extract
pink salt to taste
sprinkle of cinnamon
1 cup walnut pieces
1/8 cup olive oil
1/2 cup sugar-free chocolate chips
Instructions:
Preheat the oven to 350ºF. Mash your bananas and combine the eggs, ground flaxseed, coconut flour, chocolate protein powder, baking soda, vanilla extract, salt, and cinnamon. Mix in the walnuts and olive oil. Spread your mixture into your greased pan, and then sprinkle the sugar-free chocolate chips on top. Bake for 45-50 minutes, and enjoy!
