Cheese Muffins

These mini cheese muffins are incredibly addictive and go extremely well with just about anything, especially barbeque! Here's my take on a local BBQ chain's cheese muffins. Did I mention how good these are? They are dangerously good, especially with honey butter.

4.5 oz. bread flour (approx 3/4 cup)
4.5 oz. all purpose flour (approx 3/4 cup)
1 1/2 tsp baking powder
1/2 tsp baking soda
3/4 cup sugar plus 2 T
3/4 tsp kosher salt
4 T melted unsalted butter
1 cup buttermilk, lukewarm
2 T milk
1 large egg, room temperature
2 cups shredded sharp cheddar
Butter or honey butter, optional
Cooking spray
Muffin tins, preferably mini

Preheat oven to 375 degrees F. In a large bowl, whisk together the flours, baking soda and powder, and salt. Add cheese and mix. In another bowl, combine sugar, melted butter, buttermilk, and milk. Add egg. Add the wet to the dry ingredients and stir until just combined. Don't overmix.

Pour into greased nonstick muffin tins (or mini muffin tins) and bake 10-18 minutes, depending on the size of the tins. Tops should just start to brown when done. Test with a toothpick if you're not certain. If you can buy a digital kitchen scale (about $13), it is definitely worth it. It makes baking so much easier and always yields consistent results.
