Chicken Fried Rice (gluten free!)
Here's a simple (and cheap!) meal you can make with leftover rice and a few more ingredients.
Chicken Fried Rice:
4-6 cups room temperature rice (preferrably day-old)
1 lb. diced raw chicken breast or tenderloins
2-4 eggs, beaten
Soy sauce (or gluten free soy sauce)
Vegetable/Canola/Sunflower/Grapesee oil (any neutral tasting oil will work)
Sesame oil (optional)
3-4 cloves grated garlic
Minced onion or other vegetables (optional)
Granulated sugar (approx 2 T)
