Additives in food - Why are additives added to food? Learn how chemicals are used to enhance the taste of food and drink.

You’ve probably noticed a long list of strange ingredients on your packets of food and drink, and it’s likely that many of them are additives. Additives are chemicals added to processed foods and drinks, and each type serves a different purpose. Antioxidants are used to extend the shelf life of food, slowing down the rateat which fats and oils react with oxygen, a process that causes food to go rancid and lose its original colour.

Preservatives

Preservatives serve the same purpose, but instead prevent the growth of microbes that results in mould in cheese and bread.

Antioxidants

Antioxidants are added to meats and dairy products to stop them discoloring and going rancid.

Flavorings

Flavourings enhance the original taste of the food, or give it an entirely new flavor.

Colourings, flavorings and sweeteners are used to improve the taste and appearance of many foods and drinks so that we are more likely to buy and enjoy them.

Last, emulsifiers are used in foods such as mayonnaise and bread to combine their oil and water content, preventing them from separating as they would naturally do and making the over all appearance, structure and texture more appealing.
