Maple Banana Oatmeal Muffins

If you're looking for a perfect breakfast muffin, these oatmeal banana muffins are sure to please. Packed with whole oats and sweetened with bananas and pure maple syrup, these muffins are not only healthy, they are delicious too!

These muffins also make a great snack for the kid's lunches and are so much healthier than any prepackaged food out there.

They are nut free and can be made dairy free by substituting the milk with non-dairy milk. For a vegan muffin, just substitute the eggs with an egg replacement.

Dry Ingredients:
1 cup of unbleached flour
3/4 cup of whole wheat flour
1/3 cup of oats
1/2 tsp of salt
1/2 tsp of cinnamon
1 tsp of baking soda

Wet Ingredients:
1 cup of ripe bananas mashed (2 medium bananas)
2 eggs
1/3 cup of vegetable oil (or coconut oil, or olive oil)
1/4 cup of milk (or non-dairy milk)
1 tsp of pure Vanilla Extract

Topping:
Oats and turbino (raw) sugar to sprinkle on tops of muffins
