Quick and Easy Pumpkin Pie

When I am hosting Thanksgiving Dinner, I need a dessert that won't take up my whole day and make a huge mess in the kitchen. This pie is just that kind of dessert. Seriously, you just whisk all your ingredients together, pour into a pie crust and bake. Couldn't be simpler than that. It not only is fast to make but it is seriously the best pumpkin pie ever!

After years of trying different recipes, I've finally found the perfect pumpkin pie recipe. Other pumpkin pies that I have tried in the past have been either too thick with pumpkin or too spicy. In this recipe, the pumpkin filling is creamy and smooth, much lighter than most pumpkin pies. I also omit clove which can be too strong for my taste and add a mix of ground ginger, cinnamon, and nutmeg for a perfect balance of spices.

Pillsbury Refrigerated Pie Crusts
400ml (1 3/4 cups) of E.D. Smith 100% Pure Canned Pumpkin (puree)
2 large eggs
1 3/4 cups of whipping cream (35%)
3/4 cups of sugar
3/4 teaspoon of salt
1/2 teaspoon of ground ginger
1 teaspoon of cinnamon
1/8 teaspoon of nutmeg
