Blueberry Compote

1 cup of blueberries
4 - 5 Tbsps of Sugar
1/2 cup of water
Juice of 1/2 a lemon
A pinch of salt

Brioche French Toast

1 Brioche
3 Eggs
1 tbsp of sugar
1 tsp Cinnamon
1/2 tsp nutmeg
1/4 cup of milk

For the garnish
6-8 strawberries sliced in half
1 banana sliced
Caster sugar (this is optional)

Cheesy Egg, Bacon & Mushrooms Burger

2 buns
Handful of rocket (arugula) or shredded lettuce
4-6 thinly sliced tomatoes
6-8 buttons of mushrooms
2 strips of collar bacon or 4 strips of streaky bacon
4 eggs
1 tbsp of butter (this will impart a lot of flavour)
Handful of cheese (mozzarella, cheddar, parmesan)

Dressing

Mustard
Ketchup
