Why does Ukraine want Leopard 2 Tanks?

The news has been full of reporting about the Leopard II, as well as other modern battle tanks like the M1 Abrams and Challenger II which the Ukrainian government has been requesting in preparation for the spring offensives. But why do they want Leopard II tanks so much? And why has the German government been so hesitant to send its, and allow its allies such as Poland, Spain, and Portugal, to send theirs to the beleaguered nation?
