Singapore Chicken Tacos Ep.62
Recipe:
- 3/4 Lb (.34kg) of boneless skinless chicken cut into 1/2" x 2" strips.
Cooking and Marinade sauce:
- In a bowl add
- 1 tsp of coconut oil
- 1 Tbs. of Soy sauce
- Juice of a half of a lime
- 2 tsp. of Garlic Ginger Chili sauce
- 1 tsp. packet of Stevia or 1 tsp. of sugar
- Stir well
- Add the chicken and place in the fridge for 1 hour
Vegetables:
- Dice into match sticks the following, 1/2 yellow sweet bell pepper, 1/2 red sweet bell pepper and equal amount of red or white onion.
Topper Sauce:
- In a bowl mix
- 1 Tbs. of each mayonnaise and sour cream
- Juice of a half of a lime
- 1 Tbs. of fresh chopped cilantro
- 1 tsp. of Sriracha sauce or to taste
- 1/2 packet of Stevia or 1/2 tsp. of sugar
- Pinch of salt to taste
Cooking:
- In a medium to hot pan add the chicken and it's marinade sauce
- Cook for 3 minutes flip and cook another 3 minutes until the internal temperature is 165F
- Remove chicken and place in a bowl
- Add the diced vegetables to the hot pan, saute for a minute or 2 adding a Tbs. of water to lift all the flavours from the bottom of the pan. Veg should still be crunchy.
- Add the chicken back into the pan, stir, turn off heat.
Building the Singapore Chicken Tacos:
- Use small sized Soft Shelled Tacos
- Add 2-3 pieces of chicken on the bottom
- Place vegetables on top
- Add a generous amount of Topper sauce on top
- Garnish with fresh chopped cilantro
