Govind Gatta Curry is an authentic curry made up of refreshing and tangy curd gravy spiced with various masalas with fried gatta or dumplings stuffed with royal stuffing flavored with various Indian spices dipped in the gravy.

Ingredients:

For the dough-
1 cup gram flour/ besan
salt to taste
pinch of asafoetida/ hing
1/4th tsp turmeric powder
1 tsp coriander powder
1 tsp red chilli powder
1 tsp carom seed
1 tbsp ghee
water to knead (approx. 1/4th cup)

For boiling gatta-
Water for boiling gattas
Pinch of asafoetida/ hing
1 tsp curd
pinch of turmeric powder

Oil for frying the gattas

For the stuffing-

1 chopped green chilli
1 tbsp chopped raisins
1 tbsp chopped cashew nuts
1 tbsp chopped coriander leaves

For the gravy-
2 to 3 tsp ghee
1 tsp cumin seed
1 bay leaf
3 to 4 cloves
2 small pieces of cinnamon stick
1/4th tsp turmeric powder
pinch of asafoetida/ hing
1 chopped green chilli
1/2 inch chopped ginger
2 tomatoes puree

3/4th cup curd
1 tbsp red chilli powder

salt to taste
1/4th tsp turmeric powder
1 tsp coriander powder
1/4th tsp roasted cumin powder

1 tbsp kasuri methi/ dry fenugreek leaves
2 tbsp chopped coriander leaves
