1) Cheezy Edamame (4 servings)
- 12oz shelled edamame
- 1/4 cup (20g) grated parmesan (Violife)
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp salt

1. Set oven to 400F (200C).
2. Run the edamame under cold water for about 1 minute.
3. Dry in a kitchen towel.
4. Put on a non-stick baking sheet*
5. Add the rest of the ingredients and toss together
6. Spread out into a single layer and bake for 15-20 minutes.
*Use parchment paper if you need to

2) Apple Cinnamon Protein Balls (40 balls)
- 140g oat flour (blend whole oats in a small blender or processor)
- 1 cup whole rolled oats
- 3/4 cup (84g) pea protein puffs (Smart for Life)
- 1/2 cup almond flour
- 52 grams of vanilla protein powder (Vega Made Simple)
- 2 tsp pumpkin pie spice
- 1/4 tsp salt
- 1/2 unsweetened applesauce
- 1/4 cup cashew butter*
- 1/4 cup maple syrup

1. Add all ingredients through salt to a mixing bowl and mix together.
2. Add the remaining ingredients and mix.
3. Form into balls or bars and refrigerate for a couple hours.
*if your butter isn't runny, microwave for a few seconds first)

3) Mini Veggie Quiches (12 muffins)
- 1 zucchini
- 1 red bell pepper
- 1 tbsp olive oil
- 1 cup corn (fresh, frozen, or canned)
- dash of salt and pepper
- 4 scallions
- 1.5 cups chickpea flour
- 1/3 cup (30g) nutritional yeast
- 1.5 tsp salt
- 1 tsp baking powder
- 1 tsp garlic powder
- 1 tsp thyme
- 1/4 tsp tarragon
- more ground pepper
- 1.5 cups unsweetened, unflavored soymilk
- 1/2 cup cheddar shreds (So Delicious)

1. Set oven to 375F (190C).
2. Heat oil in large skillet.
3. Dice zucchini and bell pepper.
4. Add diced veggies, corn, salt and pepper and saute for 10 minutes.
5. While sauteing, slice scallions.
6. Mix dry ingredients (flour through ground pepper) in a large bowl.
7. Add soy milk and mix (a fork is good for smashing up any lumps)
8. Add veggies, including scallions, and cheddar.
9. Fill up a lined muffin tin* and bake for 25 minutes.
*These are pretty low fat, so I highly recommend using parchment baking cups or reusable silicone cups.

4) Black Bean Fudge Bites (12 bites)
- 2 tbsp flax
- 6 tbsp water
- 2 cups cooked black beans (drained and rinsed well if canned)
- 1/2 cup sucralose (or other artificial sweetener)
- 1/2 cup cocoa powder
- 1/2-3/4 cup unsweetened soymilk
- 60g protein powder (unflavored pea protein)
- 2 tbsp melted coconut oil
- 2 tbsp maple syrup
- 1.5 tsp baking powder
- 1 tsp vanilla extract
- 1/4 cup chopped walnuts

1. Set oven to 350F (177C).
2. Add everything except walnuts to a food processor and blend for several minutes, scraping down the sides as needed.
3. Fill up a lined muffin tin* and top with walnuts, making sure to press down into the batter.
4. Bake for 20 minutes.
*These are pretty low fat, so I highly recommend using parchment baking cups or reusable silicone cups.
