Easy Vegan Beef Stew

Here it is! My favorite vegan beef stew. Let me know if you try it!

*Ingredients*
- 2 bags of Gardein beefless tips
- 2 tbsp olive oil
- 1/8-1/4 cup flour
- ground black pepper (1/4 tsp or so)
- 1 cup veg broth
- 1 tsp red wine vinegar
- 1 onion
- 3-4 carrots
- 1 bay leaf
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 2 large russet potatoes
- 1 tbsp tomato paste
- 5.5 cups veg broth (or vegan beef broth)
- 1 cup frozen peas

*Directions*
1. Cook the tips in the olive oil according to package directions. Add the flour and pepper and cook for 2-4 minutes. Set aside. (While the tips are cooking, chop the onion and carrot and mince the garlic.)
2. Deglaze the pan with the cup of broth and vinegar.
3. Saute the onion, carrot, garlic, and herbs.
4. Add the potatoes, tomato paste, and broth. Bring to a boil, cover, and turn down to a low-ish simmer. Cook for 25-30 minutes.
5. Add the peas and cook for 5 more minutes.
6. Add the tips and serve.
