WHAT I EAT IN A DAY #4 - VEGAN PREGNANCY EDITION - 1st trimester and dealing with nausea!
Today I'm sharing with you what i eat in a day, vegan pregnancy edition. The nausea can make eating quite tricky, but I've got a few tips to help :)

*Turkish red lentil soup*
1 cup red lentils
appr. 1 cup leek, minced
1 large carrot, diced
1 tbsp tomato paste
2 garlic cloves, crushed
2 tsp cumin
1 tsp coriander
1 tsp smoked paprika
½ dried mint
1 tsp dried oregano
pinch of black pepper and red pepper flakes
5 to 6 cups vegetable broth
To serve: fresh lemon juice, pepper flakes and dried mint
Soak the lentils 30 minutes in cold water.
Sauté the leek in olive oil on medium-high heat for a few minutes. Add the carrot and cook for 5 minutes. Add garlic and tomato paste and cook another 1 minute before adding the spices. Mix well and add the lentils and broth.
Bring to a boil, lower the heat and let simmer covered for 15 to 30 minutes.
Transfer to your blender and process until nice and smooth. Serve right away topped with fresh lemon juice, pepper flakes and mint. Delicious with fresh flat bread!
