INGREDIENTS:
🔹 Extra virgin olive oil (I used Early Harvest Greek EVOO)
🔹 1 ½ pound asparagus, hard end trimmed
🔹 Salt

🔹 15 large basil leaves, torn
🔹 Cheese, Fried halloumi, feta, or shaved Parmesan (optional)
For the Sherry Vinaigrette
🔹 ¼ cup sherry reserve vinegar or white wine vinegar
🔹 ¼ cup Early Harvest extra virgin olive oil
🔹 1 garlic clove, minced
🔹 1 teaspoon sumac spice, optional
🔹 salt and pepper
